This loftily proportioned Amsterdam hotel is housed in a former bank, with seamless modern glass and iron additions to the red-brick 19th-century building. There’s a brasserie in an indoor courtyard, with towering foliage and more sheets of glass – or head to Taiko for the city’s best Japanese food (and a traditional drum player every Saturday night).
